Sweet Cherry Pie

All Butter Pie Dough

Ingredients:

2 1/4 cups all-purpose flour

1 1/2 teaspoons sugar

1 cup (2 sticks) cold unsalted butter, cut into 1/4-inch pieces

The Filling:

Ingredients

5 cups frozen sweet, pitted cherries (2 12-ounce bags)

1/2 cup sugar

1/8 teaspoon salt

1/4 teaspoon cinnamon

3 tablespoons cornstarch

2 tablespoons lemon juice

1 egg, lightly beaten

4 teaspoons demerara sugar or sugar in the raw
